Spelt Biscuit Breakfast Sandwiches


Yippee!!  Breakfast for dinner!  Or lunch!  Or how about breakfast for breakfast!  Now there's a novel idea.  Our family loves breakfast any time so I thought I would share one of our favorite breakfast meals:  Breakfast sandwiches on spelt biscuits.  Thankfully, we don't have any allergies to wheat or any other food, but I like to change it up so that we're not eating too much of one kind of thing.  Plus, these spelt biscuits are just so yummy.  They're great with butter, jam, or honey.  They're even good to use with a chicken and dumpling recipe.  So why not give them a try...

Here is the link to the recipe complete with the author's cute pictures of flower and heart shaped biscuits:  http://thenourishinghome.com/2012/03/spelt-buttermilk-biscuits/.  I'm not a fan of messy flour covered surfaces, or rolling, or cutting things out, so I just drop dough by spoonfuls onto a silicone mat and shape them into circles that resemble biscuits.  You can also make them into scones if you want.

While the biscuits are baking just fry up some eggs and bacon (Trader Joe's has some really great nitrate/nitrite free bacon) and cut the cheese.  Oh, come on!  You know what I mean!  Although, there is a lot of the other kind of cutting-the-cheese around our house with three, I mean, two little boys running around.

When the biscuits are done cut them in half, butter them (yes butter them, it's just better that way) and load them up with the eggs, bacons, and cheese.  I usually turn the oven off and put the sandwiches back in the warm oven to melt the cheese.

That's it folks!  Serve with fruit and you've got an easy breakfast sandwich for any meal!
